Chicken Curry



1 lb chicken meat cut into small cubes
1 onion chopped
3 slices of ginger finely chopped
2 tbsp soysauce
1 tbsp cornstarch
1 tbsp curry powder dissolve in 1 cup water
1 cup carrots cut into small cubes
1-2 cups potatoes cut into cubes
1 bell pepper (green or red)
1/2 cup coconut milk
jalapeno
salt


  1. marinate chicken in soysauce for 30 mins
  2. add 1 tbsp cornstarch, mix well
  3. use 4 tbsp oil to saute ginger and onion add the chicken let it fry a bit
  4. add the carrots and potatoes let it toast on the pan until light brown
  5. add curry powder dissolved in water
  6. cover and cook for 10-15 mins or until veg are soft
  7. add the coconut milk and jalapeno
  8. let it boil , season to taste
  9. turn the heat off and cover for an hour to let the taste absorb.
