Crab with Chinese Vermicelli or Sotanghon


2 fresh crabs
2 tbsp oil
6 small bundles of chinese vermicelli noodles
5 slices of ginger
3 tbsp fresh chopped garlic
3 tbsp kikoman soysauce
3 tbsp premium oyster sauce
3 cups of water
cilantro for garnish

  1. wash the noodle and let it soak in water.
  2. clean the crabs and chopped it to 4 pieces
  3. saute ginger and garlic in oil, add the crabs and let it stir fry for 10 minutes, add the soysauce and oyster sauce and cover for 2 minutes, remove the crab and place into a clean bowl leave the sauce in the pan.
  4. add water to the pan and let it boil, drain the noodles and add noodles into the boiling broth.
  5. adjust water according to your preference, for chewy texture use less water for softer texture add more water.
  6. once you put the noodles in turn the heat to medium low and let it simmer for 5  minutes then add the crabs on top and garnish with cillantro turn the heat off but let it remain cover for 10 minutes before serving.
