2/3 cup sugar
2 large eggs
1 tsp vanilla
1tsp baking powder
1/2 tsp salt
1 3/4 cup all purpose flour
1/2 cup almond
1/2 cup dried cranberries
- preheat 350F oven
- beat sugar and eggs on high speed until thick and fluffy about 3 mins
- add in the vanilla
- sift together baking powder, salt and flour
- add the dry ingredients to the egg mixture , mix until it forms a soft dough
- fold in the almonds and cranberries
- place the dough into a parchment paper or greased aluminum foil, and form into a log
- bake for 25 mins remove from heat let it cool for 10 mins
- cut into slices and bake in the oven for 10 mins at 325F , turn slices over and bake another 10 mins. remove from oven and let cool, store in an airtight container
