Mini Cheese Cake


makes about 10 medium size cup cake pan

crust:
1/3 cup butter
1/2 cup brown sugar
1 1/4  cup all purpose flour
1/4 cup raisins (optional)


1 egg
2 tbsp sugar
1 cream cheese 250 grams
1/2 cup water
1 envelop knox gelatin
1/4 cup sugar

  1. cut the butter into small cubes combine with the rest of the ingredients until it resembles crumbs, scoop 2 tbsp to each cup cake mold with lining , press firmly and bake for 15 mins 350F. then let it cool ( texture should be crispy/flaky)
  2. boil the water , gelatin and sugar until completely dissolved let cool for 10-15 minutes.
  3. beat eggs with 2 tbsp sugar, add the syrup mixture then add the cream cheese, mix until smooth.
  4. pour mixture into molds then broil for 15 mins  325F let it cool and place in chiller for at least an hour before serving, top it with your favorite jam or fruits.
