Apple Crumb Pie


makes 6 medium cupcake size

2 apples
1//4 tsp cinnamon
2 tbsp sugar
1-2 tsp  cornstarch
3 tbsp raisins
2 drops of lemon essence
1-2 tbsp water (or lemon juice)

crumbs
1 1/4cup all purpose flour
3/4 cup brown sugar
1/2 cup melted butter

  1. peel the apples and cut into small cubes, place in a saucepan then add sugar, cinnamon , raisins and starch , cook under medium low heat until it thickens,( if too thick add a tablespoon of water at a time, if too watery add some more cornstarch about a pinch dissolved in a little bit of water.) when the right consistency is achieved add 2 drops of lemon essence. Set aside to cool
  2. mix all the ingredients for the crumb, place 2 table spoon on each cupcake mold with lining, using a small spoon press the bottom and the sides to form the crust , bake it in the oven for 10 mins at  375F
  3. remove the pan from oven and scoop some apples over each pan then press lightly and cover the top with crumbs and lightly press again to prevent it from falling off easily. broil it in oven for 10-15 mins at 350F or until the top becomes light brown.
