Window Cathedral Gelatin

1  box of strawberry jello
1  box of grape jello
1  box of lime jello
or you can use other flavors

2 envelops of knox gelatin
2 cups apple juice

4 egg yolks
1 cup sugar
2 tbsp lemon juice
2 tbsp water
1 cup cold whipping cream
1 cup evaporated milk

  1. make the color gelatin according the box instruction, but reduce the water by 1/4 cup , usually one box will require 2 cups water so just use 1 and 3/4  cups. let it set in the ref until firm.
  2. make sure you already have the colored gelatin set and firm and cut into cubes before you start making the cream gelatin.
  3. to make the cream gelatin place the apple juice in a saucepan, heat until hot but Not boil, transfer to a bowl and add the knox gelatin stir until fully dissolved. set aside
  4. mix the egg yolks, sugar , lemon juice, and water in the saucepan, cook over medium low heat until it starts to thicken. remove from heat and add in the apple juice, stir and add in the cold whipping cream and evaporated milk, quickly stir and pour through a strainer, pour it into gelatin molds add colored cubes, gently stir the colored cubes. ( after pouring the evaporated milk and whipping cream it will set very quick so make sure the colored cubes are ready)
  5. chill the gelatin until firm around 3-5 hours.
