250 grams ground pork
1/4 cup minced green onion
1/4 cup minced chives
1/4 cup minced onion
1 tsp white pepper
1-2 tsp salt
1-2 tbsp rice wine
1-2 tbsp sesame oil
1 egg white
2-3 tbsp cornstarch
50 wonton/ dumpling wrappers
5-8 cups chicken soup stock
2 stalk of green onion( cut into 2 inches)
3-4 slices of ginger
1 tsp white pepper
salt to taste
- combine all ingredients for the filling, cover and keep in ref for at least 30 minutes.
- scoop a teaspoon of filling to each wonton wrapper (don't put too much) spread thinly, fold to form a triangle then seal the two ends with some water to form a ring.
- combine all the ingredients for the soup , bring to boil then start adding the wonton by batches, 10-15 a batch depending on the pot you are using. cook for 2-3 minutes remove from heat, serve with or without the soup.
tips:
- when cooking by batches you may need to add more soup and let it boil before adding the next batch of wontons.
- Some boil their dumplings in plain water, this will not be tasty compared to cooking the dumplings in the soup. try it you will taste the difference. But if you are used to adding chili sauces or vinegar then the strong taste of the sauce will not make much difference whether you boil it with plain water or soup.
