Steam Wined Chicken




10 pcs chicken legs
marinate sauce:
1 tbsp salt
1 tbsp finely chopped ginger
3 tbsp fish sauce
1/4 cup shaoxin wine

for garnish
1/4 cup spring onion
2 tbsp finely chopped ginger
1 tsp garlic (optional)
1 tsp salt
1-2 tsp sesame oil

  1. mix together all the ingredients for garnish divide into half .
  2. marinate the chicken with wine, salt, fish sauce and ginger, let it sit for 30 mins to 1 hour at room temperature.
  3. place the chicken in a steamer and place half on the garnish mix on top and steam for 45 mins, turn the heat off  add the remaining half of the garnish mix on top and cover for 5 more mins then serve.
  4. sauce from the steamer can be thicken to sauce and pour over the chicken or use as broth for other dishes.
