Taro Mushroom Chicken with Coconut milk


3 lbs chicken
1 lb taro
6 pcs dried mushroom
50 grams coconut milk powder dissolved in 1/2 cup water
2 tbsp chopped garlic
3 slices of ginger
1 cup of water
1 tbsp salt
1 tsp brown sugar
1 tbsp cornstarch dissolved in 1/2 cup water (optional)

  1. wash and soak mushroom in hot water until soft, slice each mushroom into 4.
  2. fry the taro until light brown, remove from heat, pour the oil into a container , with the same pan saute garlic and ginger then add the chicken.
  3. when chicken starts to brown add the mushroom, 1 cup of water , sugar and salt let it boil on medium  low heat for 20-25 minutes.
  4. add the taro and coconut milk let it boil for 5-8  minutes
  5. if the sauce is watery add the cornstarch mixture to thicken the sauce. Season with more salt if needed.
