3 lbs chicken
1 lb taro
6 pcs dried mushroom
50 grams coconut milk powder dissolved in 1/2 cup water
2 tbsp chopped garlic
3 slices of ginger
1 cup of water
1 tbsp salt
1 tsp brown sugar
1 tbsp cornstarch dissolved in 1/2 cup water (optional)
- wash and soak mushroom in hot water until soft, slice each mushroom into 4.
- fry the taro until light brown, remove from heat, pour the oil into a container , with the same pan saute garlic and ginger then add the chicken.
- when chicken starts to brown add the mushroom, 1 cup of water , sugar and salt let it boil on medium low heat for 20-25 minutes.
- add the taro and coconut milk let it boil for 5-8 minutes
- if the sauce is watery add the cornstarch mixture to thicken the sauce. Season with more salt if needed.
