Embutido

1500 grams ground pork
2 tbsp salt
1/2 cup pickle relish
1/2 cup ketchup
1/2 cup grated cheese
1 cup chopped carrots
1 cup chopped onion
1 cup bread crumbs
1 cup chopped red/green bell pepper
1/2  cup raisin
3 eggs

  1. mix everything and let it sit in room temperature for 10 minutes, while you can prepare 6 sheets of aluminum foils 12" long to roll the meat.
  2. place about 2 cups on each foil about 2 inches from the edge towards the center, flip the end of the foil and overlap the meat with about half inch allowance so you can press the meat back towards you to remove any air and form the shape of the cylinder, press the two edges/ends  before you start rolling. when all are finish place in a tray lined with parchment paper or foil for easier clean up later, once it is baked the juices will get all over the pan.
  3. bake in pre heated oven for 1 hour at 375F.
  4. let it cool before slicing, you can pan fry it for better taste, serve best with ketchup.
