Easy Yummy Kimchi

5-6 Large napa cabbage leaves (WASHED)
4 stalk of green onion
3-4  cloves of garlic
3 tablespoon of fishsauce
pinch of salt
1/2 tsp brown sugar
hot red pepper sauce (can be bought in korean stores in plastic box container)

  1. boil some water enough to cover the napa cabbage
  2. cut the cabbage into 1.5 inch squares , put the cabbage into the boiling water , turn the heat off, stir the cabbage for 30 seconds to 1 minute, remove from water and let it drain.( vegetable is still crunchy but it is a bit soft, i use this method instead of the traditional way of using alot of salt to drain the water out and ferment it)
  3. minced the garlic, cut the green onion to half (lengthwise) and then cut into 1 inch long. combine together with fishsauce, sugar , salt and hot red pepper sauce, mix everything together, then pour into the vegetable, mix thoroughly, let it sit for 2 hours then serve.
