Almond Cranberry Biscotti



2/3 cup sugar
2 large eggs
1 tsp vanilla

1tsp baking powder
1/2 tsp salt
1 3/4 cup all purpose flour
1/2 cup almond
1/2 cup dried cranberries 


  1. preheat 350F oven
  2. beat sugar and eggs on high speed until thick and fluffy about 3 mins
  3. add in the vanilla
  4. sift together baking powder, salt  and flour
  5. add the dry ingredients to the egg mixture , mix until it forms a soft dough
  6. fold in the almonds and cranberries
  7. place the dough into a parchment paper or greased aluminum foil, and form into a log
  8. bake for 25 mins remove from heat let it cool for 10 mins
  9. cut into slices and bake in the oven for 10 mins at 325F , turn slices over and bake another 10 mins.  remove from oven and let cool, store in an airtight container
