Gluten Puff or Mi-Jia




500 grams of gluten flour
2 cups (or more) water
2 tsp salt
  1. combine flour with water until you form a soft dough, cover with cling wrap for 2-4 hours
  2. wash the dough in running water with the bowl at the bottom and a strainer at the top, wash to remove the starch, when the water becomes less starchy about 3-5 mins of washing squeeze out excess water and form into desire shape then boil it for 20 mins. remove from heat let it cool
  3. slice it into smaller pieces then deep fry until brown.
