Shrimp Siomai


2lbs ground pork
1lb shrimp
3 dried mushroom
2 slices of ginger
2-3 tbsp rice wine
1/2 tsp white pepper
1 tsp sugar
2 tsp table salt (adjust to your taste)
2 tbsp sesame oil
1/2 cup chopped green onion (optional)
60 pcs wanton wrapper

  1. Soak the dried mushroom in hot water for at least 30 minutes or until it is soft. Drain and squeeze to remove excess water and chop finely then set aside.
  2. Soak the slices of ginger into the rice wine. Let it sit for at least 15 minutes then squeeze out the ginger juice then remove the ginger. The remaining ginger rice wine will be use to marinate the shrimp.
  3.  De-vein the shrimp. Once you're done, add a teaspoon of salt to the mixture. Mix it to combine the salt. Then, wash in running water. Drain it ot. Cut into small cubes then add in the ginger rice wine, 1 tbsp of sesame oil, and a dash of salt to marinate.
  4. In a big bowl add all the ingredients together, include the marinate of the shrimp.
  5. Mix with hand for 1-2 minutes until the mixture becomes sticky and well incorporated.
  6. Wrap in a wanton wrapper and steam for 10 minutes under medium-high heat.
