Ube and Coconut Layered RIce Cake

140 grams tapioca starch
60 grams glutinous rice flour
50 grams coconut powder
120 grams sugar
3 cups water
2 drops ube flavoring (violet)
2 drops pandan flavoring(clear no color)

  1. mix sugar and 1 cup of lukewarm water until dissolved.
  2. sift ll dry ingredients together, pour in the sugar water and another cup of water, mix until smooth, make sure there is no more lump, then add the final cup.
  3. seperate the mixture into two parts , with one part half cup more than the other.
  4. add the ube and pandan to the part that has more. (you need to start and end with the colored mixture, thus you need more compared to the plain white mixture)
  5. greased a bowl place in a steamer then pour the first layer of ube. let it steam for 3-4 mins , then pour some white and let it steam for 3-4 minutes, do this until you finish the mixture. Let it steam for 10 minutes. make sure you add water in between cooking to the steaming pot to avoid burnt pot.
